Overnight Oatmeal

Overnight Oats…

It seems like everyone and their mother is now hopping on the overnight oats train. I was a firm believer in my oatmeal being served WARM, and only W A R M. Like a steaming hot/ burn your throat kind of warm. Until I realized how THICK, CREAMY, and DECADENT overnight oats could be. It truly changed my life during those hot summer days (get your fiber without the hot flash of a warm bowl o’ oats hehe).

Use this guide as a way to make any variation of overnight oats you’d like. All recipes below may have you meal prepping oats every Sunday!

Pumpkin Pie

INGREDIENTS

  • 1/2 cup rolled oats

  • 1/4 cup pumpkin puree

  • 1/4 cup yogurt of choice

  • 1 scoop protein powder (optional)

  • 1/4 cup milk of choice

  • 1 tbsp maple syrup (or other sweetener)

  • 1/2 tsp vanilla extract

  • 1/2 tsp pumpkin spice

  • 2 tsp chia seeds

  • dash of salt

DIRECTIONS

  1. Mix all ingredients in a jar

  2. Refrigerate overnight

  3. Top with spiced yogurt, candied pumpkin seeds, and/or fresh fruit

  4. Dive in

Coconut Mango

INGREDIENTS

  • 1/2 cup rolled oats

  • 1 tbsp flax meal

  • dash of salt

  • 1/2 cup coconut milk

  • 1/2 cup vanilla yogurt of choice

  • 1 tbsp maple syrup (or other sweetener)

  • splash of vanilla extract

  • 1/2 mango, cubed

DIRECTIONS

  1. Mix all ingredients in a jar

  2. Refrigerate overnight

  3. Top with sliced mango, banana, coconut granola (or desiccated coconut)

  4. Dive in!

GOLDEN TURMERIC

INGREDIENTS

  • 1/2 cup rolled oats

  • 2 tsp turmeric

  • pinch of black pepper

  • dash of cinnamon

  • dash of sea salt

  • 1 tbsp flax meal

  • 1 scoop protein powder (optional)

  • 1/2 cup vanilla yogurt of choice

  • 1/4 cup milk of choice

  • 1 tbsp maple syrup (or other sweetener)

  • splash of vanilla extract

DIRECTIONS

  1. Mix all ingredients in a jar

  2. Refrigerate overnight

  3. Top with berries, peanut butter, and honey

  4. Dive in!

STRAWBERRY SHORTCAKE

INGREDIENTS

  • 1/2 cup rolled oats

  • 1 tbsp flax meal (gives a cake like texture/taste)

  • dash of cinnamon

  • dash of sea salt

  • 1/2 cup chopped strawberries

  • 1/3 cup vanilla yogurt of choice

  • 1/3 cup milk of choice

  • 1 tbsp maple syrup (or other sweetener)

  • splash of vanilla extract

DIRECTIONS

  1. Mix all ingredients in a jar

  2. Refrigerate overnight

  3. Top with sliced strawberries & crushed graham cracker

  4. Dive in!
