Baked Oatmeal Varieties
Baked oatmeal… let’s talk about her. She’s not that well known but imagine this: you wake up slightly early, it’s chilly outside (maybe a bit gloomy) and you have an hour before work/school from home starts. You preheat the oven, pop this ramekin in there, and 25 minutes later you’re left with a warm & comforting dish you can munch on while “Me & Mr.Jones” streams in the background.
Baked oats are amazing because you can add literally anything you want, you can quadruple the recipe (don’t double the baking soda) as meal prep, and you can even blend the batter for a more cake like consistency. Now go preheat your oven, choose a variation below and dive in!
Chocolate Orange Oat “Cake”
Ingredients
1/2 cup rolled oats (blended into oat flour)
1 1/2 tbsp cocoa powder
1 tbsp flax meal
1 tsp baking powder
1/4 tsp salt
3 tablespoons orange juice
1 tablespoon maple syrup
1 tsp vanilla extract
1/3 cup milk of choice
1 teaspoon orange zest
Directions
Preheat oven to 350 degrees fahrenheit
Mix the oats, cocoa powder, baking powder, flax meal, and salt in a bowl until combined
Add the orange juice, vanilla, maple syrup, zest, and oatmilk to the dry ingredients until incorporated
Bake for 20-25 minutes until a toothpick comes out clean
Top with chocolate sauce, confectioners’ sugar, and dash of orange zest!
Gingerbread
Ingredients
1/2 cup rolled oats
1 tbsp brown sugar
1 tsp baking powder
1/2 tsp ginger
1/2 tsp cinnamon
1/4 tsp allspice
dash of salt
pinch of nutmeg
1 tsp vanilla extract
1/2 cup milk of choice
Directions
Preheat oven to 350f
Mix the oats, sugar, baking powder, salt, and spices in a bowl until combined
Add the milk and vanilla to the dry ingredients until incorporated
Bake for 20-25 minutes until a toothpick comes out clean
Top with confectioners’ sugar, spiced yogurt (greek yogurt mixed with vanilla, cinnamon, and maple syrup), and a dash of cinnamon.
Carrot Cake
Ingredients
1/2 cup rolled oats
1/3 cup shredded carrot
1/2 tbsp flax meal
1 tsp baking powder
1/4 tsp cinnamon
1/2 tsp pumpkin spice
dash of salt
1 tsp vanilla extract
1 tbsp maple syrup
2/3 cup milk of choice
1 scoop protein (optional)
1 tbsp walnuts (optional)
1 tbsp raisins (optional)
Directions
Preheat oven to 350f
Mix all ingredients in a bowl and pour into a greased baking dish; bake for 20-25 minutes
Garnish with cream cheese drizzle, nut butter, and/or maple syrup
Pumpkin Pecan
Ingredients
1/2 cup rolled oats
1/4 cup pumpkin puree
1 tsp baking powder
1/2 tsp pumpkin spice
dash of salt
1/2 tsp vanilla extract
1 tbsp maple syrup
1/2 cup milk of choice
1 tbsp pecans (optional)
1 tbsp chocolate chunks (optional)
Directions
Preheat oven to 350f
Mix all ingredients in a bowl and pour into a greased baking dish; bake for 20-25 minutes
Garnish with nut butter and/or maple syrup
Blueberry Cheesecake
Ingredients
1/2 cup rolled oats
1/2 banana, mashed
1/4 cup blueberries
1 tsp baking powder
1/4 tsp cinnamon
dash of salt
1 tsp vanilla extract
1 tbsp maple syrup
1/3 cup milk of choice
1 scoop protein (optional)
{Cream Cheese Center}2 tbsp dairy-free cream cheese
1 tsp powdered sugar
1 tsp vanilla extract
dash of lemon juice
Directions
Preheat oven to 350f
Blend ingredients (except blueberries) until slightly combined. Pour into a greased baking dish
Add cream cheese filling in center
Bake for 20-25 minutes
Garnish with cream cheese drizzle
