Umami-Rich Mushroom Gravy

Any thanksgiving turkey, plate of mashed potatoes, or flakey-buttery biscuit calls for a smooth pour of gravy to be doused over it. Although, plain turkey gravy lacks SO much depth and flavor. It’s a missed opportunity.

This time, we’re adding the perfect crimini mushroom. Mushrooms are special because they not only add a fun texture to a dish, but they bring with them a powerful punch of umami (a pleasant “meaty” savory taste).

What’s beautiful about this mushroom gravy is how flavorful it is WITHOUT using meat or dairy- making it suitable for any vegan/vegetarian friendly dinner table.

Umami-Rich Mushroom Gravy

INGREDIENTS

  • 6 oz cremini mushrooms

  • 1/2 yellow onion, diced

  • 2-3 garlic cloves, minced

  • 1/4 cup extra virgin olive oil

  • 1/3 cup all-purpose flour

  • 2 1/2 cup vegetable broth

  • 1 tbsp soy sauce

  • 2 tsp thyme leaves

  • 1 tsp nutmeg

  • 1 tsp truffle seasoning (optional)

  • Salt and pepper to taste

DIRECTIONS

  1. Begin by washing all of your mushrooms and slicing them (into 1/4” slices)

  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion, garlic and saute until onions are transparent.

  3. Add the mushrooms, thyme, nutmeg, and truffle seasoning (optional) and saute until browned (about 4-5 minutes).

  4. Sprinkle in the 1/3 cup of flour, stirring until golden brown (about 3-4 minutes). Slowly whisk in (do not use a spatula as this will cause the flour to clump) the vegetable stock, 1/2 cup at a time. Continuously stir until a smooth (almost thick) sauce comes to fruition. Stir in the soy sauce

  5. Simmer for 2-3 minutes. Season with salt and pepper. Adjust seasonings per your taste by adding more nutmeg or truffle seasoning if you'd like.

  6. Serve over flakey buttermilk biscuits, mashed potatoes, or yourself (hahaha)

  7. Dive in!
