Peanut Butter Miso Noodles
Unpopular opinion, but for the most part, I am ramen’d out. It’s not my go to meal after a long day…but noodles hit so different when you’re sad and need a little…pizzaz?
Enter: Peanut Butter Miso Noodles. This recipe requires one to throw that flavor packet away and instead, create a orsnge hued paste that will result in the most silky of noods.
Nutty from the peanut butter, rich and saty from the miso, and a little kick from the sriracha or chili oil is the perfect medley for a quick and flavorful dish to serve for 1 (or 2, I suppose).
Miso Peanut Butter Noodles
Yield: 1 serving
Time: 10-15 minutes
INGREDIENTS
1 tablespoon red miso paste
1 tablespoon peanut butter
1/2 tablespoon chili oil/sriracha
1 tablespoon rice vinegar
1 small garlic clove, minced
1/2 tablespoon soy sauce
1/2 tablespoon maple syrup
noodles (with 1/4c reserved noodle water)
steamed bok choy, for garnish
sauteed mushrooms, for garnish
sesame seeds, for garnish
scallions, for garnish
chili oil, for garnish
DIRECTIONS
To make the sauce:
To In a bowl, whisk together the miso, peanut butter, chili oil/sriracha, rice vinegar, minced garlic, soy sauce, and maple syrup. Stir until incorporated (it may be a bit thick to start out, but we will thin the sauce out later)
To assemble:
Cook your noodles and reserve 1/4 of noodle water. In a bowl, add the noodles, peanut butter-miso sauce, and noodle water. Mix until all the noodles are coated and the sauce begins to cling to each noodle.
Top with favorite toppings such as steamed bok choy, sauteed mushrooms sesame seeds, scallions, and chili oil
