Decadent Peanut Noodles

Comfort

For those days... you know the shitty ones, the ones that seem unbearable. I haven’t always found comfort and peace with food. It took a while but finally being able to find the simplicity and serenity of nourishing my body with a meal has made cooking (and eating) so much more enjoyable. I used to be terrified of anything that was “too fatty” or “stir fried” for fear that it wasn’t healthy enough or that it “could” reverse all the work I’ve done so far. And I say the hell to that stigma.

If you’re feeling blue, need some comfort, a hug, or just a meal that warms your soul- make these noods and share them with someone you love (or yourself because that’s just as important)

Peanut Noodles

INGREDIENTS

  • 1/4 cup peanut sauce

  • 4 oz egg/rice/whatever noodles

    • Reserve 1/4 cup pasta water

  • 2 tbsp sesame oil

  • 2 garlic cloves

  • 1 cup chopped kale

  • 8 oz extra-firm tofu (pressed)

  • 2 tbsp cornstarch

  • 1/4 tsp allspice

  • 1/2 tsp ground ginger

  • 1/2 cup julienned carrots

  • 2 tbsp chopped cilantro

DIRECTIONS

  1. Cube tofu; set aside. Mix cornstarch, allspice, and ground ginger in a bowl until well combined. Coat tofu in cornstarch mixture

  2. Heat 1 tbsp sesame oil in a skillet, fry tofu until golden brown and crispy; set aside

  3. Heat remaining 1 tbsp sesame oil, saute garlic cloves until softened; add greens and saute

  4. Add cooked noodles, peanut sauce, and 1/4 cup of reserved pasta water

  5. Once evenly coated, plate and mix in chopped cilantro and julienned carrots

  6. Garnish with sriracha, sesame seeds, and red pepper flakes

  7. Dive in!
