Decadent Peanut Noodles
Peanut Noodles
INGREDIENTS
1/4 cup peanut sauce
4 oz egg/rice/whatever noodles
Reserve 1/4 cup pasta water
2 tbsp sesame oil
2 garlic cloves
1 cup chopped kale
8 oz extra-firm tofu (pressed)
2 tbsp cornstarch
1/4 tsp allspice
1/2 tsp ground ginger
1/2 cup julienned carrots
2 tbsp chopped cilantro
DIRECTIONS
Cube tofu; set aside. Mix cornstarch, allspice, and ground ginger in a bowl until well combined. Coat tofu in cornstarch mixture
Heat 1 tbsp sesame oil in a skillet, fry tofu until golden brown and crispy; set aside
Heat remaining 1 tbsp sesame oil, saute garlic cloves until softened; add greens and saute
Add cooked noodles, peanut sauce, and 1/4 cup of reserved pasta water
Once evenly coated, plate and mix in chopped cilantro and julienned carrots
Garnish with sriracha, sesame seeds, and red pepper flakes
Dive in!
