Chick(pea) Burgers
Chickpea Burgers
INGREDIENTS
1 can chickpeas, rinsed and drained
2-3 sprigs of parsley, chopped
1/3 cup zucchini, grated
1/4 of a red onion, diced
1/2 of a lemon, juiced
2 garlic cloves, minced
3 tbsp flour (or cornstarch)
2 tbsp nutritional yeast
1/2 tsp cumin
1/4 tsp cayenne
1/2 tsp salt
1/4 tsp pepper
DIRECTIONS
Pulse all ingredients in a food processor until just combined (be careful not to over-blend)
Form 2 patties and place in the refrigerator for 1 hour (or the freezer for 15 minutes)
Grill or cook on an oiled skillet
Assemble with special sauce, tomatoes, greens, & coleslaw on a potato bun
Dive in!
