Spiced Grapefruit Coconut Loaf

Citrus season may actually be the most rewarding season of them all. During the winter months in the northern hemisphere of the world, one would be hesitant to believe that somewhere on this planet it’s warm enough for these bright hued fruits to bear, well, fruit.

Not only is citrus packed full of bright and fragrant flavors, but they also drip of antioxidants and vitamin C- essential components needed to mend off any cold or virus circulating around.

This quick bread style loaf was inspired by a simple Moroccan dessert I grew up eating- a plate full of juicy citrus sprinkled with orange water and cinnamon. Though this recipe uses grapefruit for a zesty profile, orange would be a great flavor as well! We’re also using coconut milk to bring the tropics to us, aiding in a moist and deadent texture after each bite.

Spiced Grapefruit Coconut Loaf

Yield: 1 loaf (approx. 8-10 slices)

Time: 1 hour + cooling time

INGREDIENTS

  • 1 3/4 cup all-purpose flour

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 teaspoon cinnamon

  • 1 teaspoon cardamom

  • 1/2 teaspoon nutmeg (preferably freshly ground)

  • 1 tablespoon grapefruit zest

  • 3/4 cup granulated sugar

  • 2/3 cup full-fat canned coconut milk

  • 1/2 cup grapefruit juice

  • 1/2 cup greek yogurt (2% or full-fat; can sub with a non-dairy alternative)

  • 1 teaspoon vanilla extract

DIRECTIONS

  1. Preheat your oven to 350 degrees Fahrenheit (177 degrees celsius)

  2. In a medium bowl, whisk together the flour, baking powder, baking soda, spices, and salt until combined. Set aside

  3. In a small bowl, add the sugar and grapefruit zest. Using your fingers or a fork, incorporate the zest into the sugar until slightly aromatic and the sugar turns a subtle orange hue. Set aside

  4. In a large bowl, whisk together the coconut milk, grapefruit juice, greek yogurt, vanilla extract, and sugar/zest mixture until well combined.

  5. Fold the dry ingredients into the wet until just combined. Do NOT over mix as this leads to a denser loaf.

  6. Grease a 9x5 loaf pan and line with parchment paper. Pour the batter into the pan and bake for 35-40 minutes. The loaf is ready when a clean toothpick comes out when poked in the center of the loaf.

  7. Let cool for 1 hour before adding the glaze.

  8. Garnish with a coconut cream glaze (see notes), grated coconut, and candied citrus.

  9. Dive in!


NOTES

Coconut Cream Glaze

Ingredients

  • 1/2-3/4 cup confectioners sugar

  • 1-2 tablespoons coconut cream

  • 1/2 teaspoon vanilla extract

  • dash of salt

Directions

  1. In a bowl, mix together all of the ingredients until a drizzly consistency comes to fruition. Place in the refrigerator to set prior to glazing loaf.
