Blood Orange Olive Oil Cake
Blood Oranges?
A magical citrusy delight! At first glance, this may seem like a plain ol’ orange, but you’d be wrong. Blood oranges, though similar to their navel orange counterpart, are subtly more sweet with a spooky red hued color- making this the perfect component for the sweetest of treats and bougiest of cocktails.
Growing up, my grandmother (born and raised in Morocco) seemed to master the art of balancing the acidic nature of citrus. My favorite dish she crafted was one that inspired the recipe for this “Blood Orange Olive Oil Cake”. Like her iteration, this cake perfectly balances the acidity of a blood orange with the sweetness of honey, the depth of almond flavoring, and the pep from a pinch of cinnamon.
BLOOD ORANGE OLIVE OIL CAKE
INGREDIENTS
1 3/4 cup all-purpose flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp sea salt
1 tbsp rosemary, minced
3/4 cup granulated sugar
3 tbsp blood orange zest
2 tbsp blood orange juice
1/4 cup yogurt of choice
1 tsp almond extract
2 flax eggs (2 tbsp flax meal + 5 tbsp water; mixed and chilled for 15 mins)
You can sub with regular eggs if you’d like
1/2 cup extra virgin olive oil
DIRECTIONS
Preheat the oven to 350F
Mix the orange zest and sugar until evenly coated; set aside
In a bowl, mix together the orange juice, yogurt, almond extract and flax eggs until well combined
Add the sugared zest to the wet mixture and combine; set aside
In a large bowl, mix together all dry ingredients until combined
Slowly fold in the wet mixture into the dry ingredients (do not over mix)
Slowly fold in the olive oil, a little at a time
Pour the batter into a 9x9 cake pan lined with parchment paper
Bake at 350F for 40-50 minutes (or until a toothpick comes out clean)
Let cool; Then drizzle with orange-almond glaze (See notes)

Orange-Almond Glaze
INGREDIENTS
1 1/2 cup confectioners’ sugar
4-6 tbsp blood orange juice
1 tbsp blood orange zest
1-2 tsp almond extract
1-2 tbsp milk of choice
DIRECTIONS
Mix until well combined
Pour over cake
