Apple Stuffed Coffee Cake
Coffee Cake… she’s got a reputation of being dry and crumbly- kind of like that ex, ya know? Rest assured, we have found the key to a moist, spongey, and decadent coffee cake.
Enter “…Stuffed Coffee Cake”! This recipe is wonderful with any pome fruit aka apples and pears, as they hold their shape very well while adding a subtle sweetness that compliments the array of spices used. Unlike other coffee cakes, this one uses actual coffee- giving the slight rich acidity (and jitters) that we look forward to every morning.

Apple Stuffed Coffee Cake
INGREDIENTS
{Coffee Cake Batter}
1 cup milk of choice, warmed
1/2 tbsp apple cider vinegar
1/4 cup coconut oil, melted
2 tsp vanilla extract
1 3/4 cup all-purpose flour
1/3 cup brown sugar
1/3 cup white sugar
2 tsp baking soda
1/2 tsp baking powder
1 tsp cinnamon
1/2 tsp sea salt
{Apple Layer}
2 gala apples, thinly sliced
1 tsp cinnamon
{Streusel}
1/2 cup all-purpose flour
1/3 cup brown sugar
1/2 tsp sea salt
2 tsp cinnamon
1/2 tsp allspice
1/4 tsp nutmeg
3 tbsp coconut oil, softened
DIRECTIONS
Preheat the oven to 350F
In a large bowl, mix together the. flour, sugar(s), baking soda, baking powder, cinnamon, and sea salt; set aside
In a separate bowl, mix together the milk, apple cider vinegar, coconut oil, and vanilla extract
Fold in the wet mixture into the dry ingredients, mix until just combined
Pour into an 8x8 greased and parchment lined baking dish
Slice 2 gala apples thinly and coat with cinnamon; layer on top of the batter
In a small bowl, mix together the streusel ingredients using hands or a fork until crumbles form
Sprinkle the streusel and roasted pecans on top of the apple layer
Bake at 350F for 35 minutes
Let cool; drizzle coffee glaze (see notes)

INGREDIENTS
1/3 cup confectioners’ sugar
1 tbsp brewed coffee
1 tsp vanilla extract
dash of salt
DIRECTIONS
Mix until well combined
Pour over cake
