Pumpkin Pie Oatmeal
Pumpkin Pie oatmeal is THE dish I look forward to every fall/wiinter season. The epitome of comfort is this bowl o’ mush. And yes- mush is the superior texture of all o’ the food groups. Oatmeal, porridge, grits, mushy cereal- whatever it may be, I want it IN ME.
This bowl inspired by the classic pumpkin pie uses all of the classic flavors of the often disappointing autumnal themed pie. It’s usually best served with a FAT dollop of yogurt, a lengthy drizzle of peanut butter, and layers of sliced banana. Don’t forget the heavy pour of maple syrup and dusting of cinnamon for the most prfct start to your day.
Now grab a can of pumpkin (good luck if you’re reading this during september, we know the pumpkin bitches are hoarding the cans from every store) and enjoy!
Pumpkin Pie Oatmeal
Yield: 1 serving
Time: 5-10 minutes
INGREDIENTS
1/2 cup rolled oats
1/3 cup pumpkin puree 1/3-1/2 cup milk of choice/water
1 tablespoon maple syrup
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
1/2 teaspoon pumpkin pie spice (or 1/4 teaspoon of allspice, clove, and nutmeg)
dash of salt
a scoop of vanilla protein powder (optional, not needed)
splash of milk or creamer (to thin)
Favorite Topping Combo’s include:
Sliced Banana
Pomegranate Seeds
Greek Yogurt
Nut butter of choice (peanut butter, preferably)
Maple Syrup
Flaky Sea Salt
DIRECTIONS
In a bowl, add your rolled oats, pumpkin puree, maple syrup, vanilla, spices, and salt.
Cook per your preferred cooking method: Microwave: Heat in the microwave for 1:30. Stove Top: Heat over medium heat; cook for about 4 minutes, stirring occasionally.
Once cooked, add protein powder (if using, not necessary) and a splash of milk or your favorite creamer.
To Assemble:
Add the oats to your favorite, prettiest bowl.
Dollop yogurt and drizzle on peanut butter. Garnish with your favorite fruit. Pour a heaping amount of maple syrup. Sprinkle on a bit of flaky salt.
