Blood Orange-Cardamom Pancakes
Blood Orange-Cardamom pancakes are your newest obsession and they’re easy to whip up on any day. Just a simple mix of spices, oat flour, and baking powder (for fluffy cakes of course) and then blended with the zestiest concoction of orange juice and floral waters- helping you brighten any day.
Now pancakes and nostalgia are one and the same.These stacks were usually reserved for holiday mornings or special occasions, allowing us to remember the good ol’ days.
But, let me tell you that every day is SPECIAL, worthy of a vibrant stack, equivalent to any pomegranate seed or drizzle of honey devoured with every bite.
Blood Orange-Cardamom Pancakes
Yield: 8-10 pancakes
Time: 15-20 minutes
DIRECTIONS
In a large bowl combine the flour, salt, baking powder, baking soda, cinnamon, and sugar. Set aside
In a smaller bowl, combine the milk, orange juice & zest, and extracts.
Mix the wet into the dry until combined. The batter should not be too thin (like crepe batter) or too thick (like brownie batter). You should aim for a cake-like consistency. Set aside for 2-3 mins.
Meanwhile, heat a pan with neutral cooking oil (I prefer grapeseed or vegetable)
Using a 1/4 measuring cup or 2 oz cookie scoop, pour batter into the pan. Cook the pancakes on one side until air pockets begin to appear on the surface and flip (about 1-2 mins per side)
Serve with the orange blossom glaze-tahini glaze (see notes) and/or yogurt/nut butter/ syrup of choice.
Garnish with sliced blood oranges, pomegranate seeds, and/or bananas. Sprinkle a dusting of cinnamon on top.

1 1/2 cup oat flour (or all-purpose flour)
1/2 teaspoon salt
2 teaspoons baking powder
1/4 teaspoons baking soda
1/2 teaspoon cinnamon
1/2 teaspoon cardamom
2 tablespoon coconut sugar (granulated can be used as well)
1/2 teaspoons blood orange zest (can substitute with navel/Valencia oranges)
2 tablespoons blood orange juice
1/2 teaspoon vanilla extract
1/2 teaspoon orange blossom water (necessary, can be subbed with vanilla extract)
1 cup -1 1/4 cup milk of choice (depending on the consistency of the batter)

nut butter of choice, for garnish

Notes
Orange Blossom-Tahini Glaze
Ingredients
2 tablespoon tahini
1 tablespoon honey
1/4 teaspoon orange blossom water (or vanilla extract)
dash of salt
dash of cinnamon
Directions
Stir until well combined. If too thick, add water 1 tablespoon at a time to thin.
Adjust seasoning (cinnamon/honey) to your liking
