“Coquito” Chia Pudding

Coquito is an essential treat during the holidays in Puerto Rican households around the world. This festive drink is like the love child of horchata and a pina colada. It’s thick, rich, and sweet as hell, making it the perfect cocktail to wash down your thanksgiving leftovers plate.

This chia pudding uses the flavors that are injected into this tropical holiday cocktail. Those flavors in question are coconut, cinnamon, and nutmeg. Despite the tropics being warm in temperture, we can always use some warmth in flavor and flair in our mouths.

My favorite chia seed to use is the Raw Organics Chia Seeds from Garden of Life. There chia seeds are sourced sustainbly and are USDA organic. Not to mention, full of healthy omegas like Omega-3 and Omega-6.

Each bite of this recipe brought me back to high school, and the yearly tradition of my mom gifting all the staff with bottles of this sweet and sinfully delicious cocktail to thank them. And yes, the coquito was gifted in the “old” glass cocoa bottles… because for some reason my mom has a surplus of them!

Coquito-Inspired Chia Pudding

Yield: 4 servings

Time: about 10 minutes prep + overnight chill time

INGREDIENTS

  • 1/2 cup Garden Of Life RAW Organics Chia Seeds

  • 1 (15-ounce) can of full-fat coconut milk

  • 1/2 cup oat milk (or milk of choice)

  • 1/4 cup maple syrup

  • 1/2 tablespoon vanilla extract

  • 1 teaspoon cinnamon

  • 1/2 teaspoon nutmeg

  • 1/4 teaspoon of salt

  • 1/4 cup coconut shreds

  • Coconut Shreds, to garnish

  • Cinnamon, to garnish

DIRECTIONS

  1. In a large bowl, whisk together the chia seeds, coconut milk, oat milk, maple syrup, vanilla extract, cinnamon, nutmeg, and salt until combined

  2. Place in an air-tight container and let it sit overnight in the refrigerator.

  3. The next day, give the pudding a mix. If it thickened too much to your liking, add an additional 2 tablespoons of milk (at a time) until the desired consistency comes to fruition.

  4. Serve and garnish with coconut shreds and cinnamon.

  5. Dive in!
