Apple Fritter Pancakes

They’re iconic- if you will. Why you ask? Well-you can literally stuff them with anything! They can be sweet, savory, both, and/or whatever your heart desires.

One morning, I had bought some apples on my way back home from my run. I instantly thought of apple fritters from the Italian feast in Little Italy and how much I would miss them this year due to COVID pretty much making every pleasure in life a health hazard.

I decided to use the trusty pancake as a base for my cravings of the sweet, crispy, and spiced fritter’s I wouldn’t be having this year on Canal Street. I promise this stack (it’s VEGAN by the way) will kick your day off the way it should- sweet, like you are.

Apple Fritter Pancakes

Yield: 10 pancakes

INGREDIENTS

  • 1 cup all-purpose flour

  • 1 tbsp white sugar

  • 1 tbsp baking powder

  • 1 tsp cinnamon

  • 1/2 tsp salt

  • pinch of nutmeg

  • 1 tbsp coconut oil

  • 1 tbsp apple cider vinegar

  • 1 cup milk of choice (I used oat)

  • 1 tsp vanilla extract

  • 1 flax egg (see notes)

  • 1/2 gala apple, grated

DIRECTIONS

  1. In a large bowl, sift in the flour. Add the white sugar, baking powder, and spices; mix until combined

  2. In a separate bowl, mix together the coconut oil, apple cider vinegar, milk, vanilla extract, flax egg, and grated apple until combined

  3. Combine the wet ingredients with the dry and mix until combined.

  4. Grease a skillet with oil (butter tends to burn) under medium-heat

  5. Using a 1/4 measuring cup, pour batter into skillet

  6. Cook 2-3 minutes per side, until golden brown and slightly crispy

  7. Top w/ sautéed apples, spiced yogurt, peanut butter, and maple syrup

  8. Dive in!


{NOTES}

  • Flax eggs are a vegan substitute for regular eggs. Feel free to replace the flax egg with 1 egg.

    • To make a flax egg mix 1 tbsp flax meal with 3 tbsp warm water; set aside for 15 minutes.

  • Sauteed Apples

    • Thinly slice the other 1/2 of the gala apple. Heat 1 tbsp coconut oil in a skillet then add the sliced apples with 1/2 tsp cinnamon, 1/4 tsp nutmeg, 1 tbsp maple syrup, and a splash of milk. Let simmer until softened.
